Preparation time 10 minutes Cooking time 30 mins Serves 4
Ingredients:
1 lt milk
1 cup condensed milk
1 cup sugar
2 tbsp custard powder ( optional )
2 tbsp cashew powder
1/2 cup chopped cashew
1/2 cup chopped almonds ( badam )
1/2 cup chopped pistachios
pinch of cardamom powder
pinch of saffron ( for coloring and flavour )
Preparation :
1 Boil the milk in the pot . Bring it to boil in simmer flame. Add condensed milk and stir it so that milk don't stick to the bottom of the pot.
2 Now its time to add sugar after 10 mins of adding condensed milk and stir it completely to dissolve in the milk.
3 Once the sugar completely dissolves add cashew powder which makes the basundi thick and rich in taste then add custard powder and its optional ( but i like to add powder which gives more intense sweet taste)
4 Then include rest of the ingredients cashew , almonds , pista and bring it boil in simmer flame and stir continuesly to avoid the formation of any lumps in the milk.
5 Now adding saffron to the basundi will give it a nice aroma and a light yellowish to the basundi and brings a authentic rich sweetness to the recipe.
6 At the end sprinkle pinch of cardamom powder to give additional aroma and to bring back its traditional flavour.
Note :
1 The important thing is stirring the milk continuesly in low flame to avoid lumps which usually happens.
2 The sweetness of recipe is much more important than adding those ingredients. So measure carefully sugar quantity.
3 You can add sweet raisins and honey for additional flavours
Health points :
Almonds , cashew , pistachious are naturally having more nutritional benefits which overall good for health.
A complete sweet recipe with a goodness of bit healthy nuts!
